- 1 tsp vanilla extract

Instructions for Strawberry Yogurt Bites
Step 1: Combine Strawberries and Coconut Yogurt
In a bowl, mix a handful of chopped strawberries with your favorite dairy-free yogurt, such as Culina plain coconut yogurt. Of course, feel free to choose any other dairy-free yogurt or greek yogurt for extra protein that suits your taste buds. Stir well to ensure the strawberries are evenly coated with the creamy goodness of the yogurt.
Step 2: Scoop and Freeze
Second, line a tray or plate with parchment paper. Using a spoon or cookie scoop, place bite-sized portions of the strawberry-yogurt mixture onto the parchment paper. Ensure you create small, evenly shaped portions. Once done, transfer the tray or plate to the freezer to allow the bites to firm up.
Step 3: Melt Coconut Oil and Dark Chocolate
In a microwave-safe bowl, melt a pinch of coconut oil and some dark chocolate together. If you prefer, you can also use a double boiler for melting the chocolate. For a blood sugar bliss option, consider using B.T.R. Nation chocolate truffles, which have no-added sugars or artificial sweeteners. These truffles contain 90% less sugar than regular chocolate and are made with functional ingredients.
Step 4: Add Creamy Peanut Butter
Once the chocolate is melted and smooth, incorporate a touch of creamy peanut butter into the mixture. We recommend using Georgia Grinders as it contains no added sugar or oils. It’s a great source of healthy fats (not protein!) that can help balance blood sugar.Stir well until the peanut butter blends seamlessly with the chocolate, creating a delectable combination. This is also when I would add my vanilla extract in!
Step 5: Drizzle and Spread
Take the tray or plate with the frozen strawberry-yogurt bites out of the freezer. Drizzle the melted chocolate-peanut butter mixture over the strawberry-yogurt bites, making sure to spread it evenly to coat each bite. This step is where the magic happens, combining the sweetness of chocolate and the fruity tang of strawberries.
Step 6: Freeze Again
Return the tray or plate to the freezer for approximately 15-20 minutes. This time allows the chocolate to set and adhere to the strawberry-yogurt bites, creating a delightful, frozen coating.
Step 7: Sprinkle with Flaky Salt and Enjoy!
After the freezing time has passed, remove the strawberry chocolate yogurt bites from the freezer. Sprinkle them with a touch of flaky salt to elevate the flavor profile and add a satisfying crunch. Now, it’s time to savor the fruits of your labor! Indulge in blood sugar-friendly treats.

Recently, I’ve been making these on a silicone mat instead of parchment and it’s so much easier to peel off. I’ve also switched up the recipe to include raspberries and chopped mango instead of strawberries and it’s a delicious combination. On a few occasions, I’ve even added a teaspoon of honey to the recipe to give it a touch of sweetness! I haven’t tried it yet, but I think adding a drizzle of white chocolate instead of dark chocolate would be a great way to switch up the original recipe.
