What We Cooked Up on Texas Today 🌮🥑

🥣 Breakfast Power Bowl – Pork Sausage + Guac

A high-protein, fiber-packed bowl that keeps you fueled all morning.

Ingredients (serves 2):

  • 4 large eggs, scrambled
  • ½ cup cooked pork sausage crumbles
  • 1 cup cauliflower rice (or brown rice)
  • 1 cup sautĂ©ed veggies (bell peppers, zucchini, or spinach)
  • ½ cup ¡Yo Quiero! Original Guacamole

Directions:

  1. Cook pork sausage in a skillet until browned. Remove and set aside.
  2. In the same skillet, scramble eggs.
  3. Warm cauliflower rice and sauté veggies.

  • 2 tsp taco seasoning
  • 8 large butter lettuce leaves (or 6 cups mixed greens for salad version)
  • ½ cup pickled onions
  • 1 cup salsa or pico de gallo
  • 1 cup ¡Yo Quiero! Hatch Chile Guacamole

Directions (slow-cooker method):

  1. Rub pork with olive oil + taco seasoning. Place in slow cooker with ½ cup water. Cook on low for 6–8 hours (or high for 3–4). Shred with forks.
